Our adventure began with a visit to the magnificent State Capitol, an iconic landmark that truly embodies the rich history and grandeur of Texas. Walking through its halls, imagining the pivotal decisions made within its walls, provided a fascinating educational experience for all of us, especially the kids.
After soaking in some history, our stomachs led us to Austin’s renowned food truck scene. This city is a paradise for foodies, and sampling an array of delicious and diverse culinary creations from various trucks was an absolute highlight. I picked up a wonderfully large pumpkin at the store, and starting October 1st, we began writing one thing we’re grateful for on it each day. The idea is to continue this daily practice until the pumpkin is completely covered with expressions of thanks, or until the end of October. If the pumpkin holds up, we might even extend it all the way to Thanksgiving, making it a beautiful centerpiece and a tangible representation of our collective blessings.

This simple activity helps foster a positive mindset, encourages reflection, and teaches the kids the importance of appreciating the small joys in life. Its elaborate design might be a bit much for our current aesthetic, but it’s stunning nonetheless.
