  • ½ cup unsalted buttersoftened to room temperature

  • Using a size #50 cookie scoop, portion the dough into round balls. Place them on the prepared baking sheet, ensuring 2 inches of space between each. Gently press each dough ball with the palm of your hand to create a flat, thick disk.
  • Bake for 8-10 minutes, or until the edges are set and lightly golden. Remove from the oven and let cool on the pan for 10 minutes before transferring to a wire rack to cool completely.

Toasted Marshmallow Frosting

  • To toast the marshmallows, first spray a cookie sheet lightly with nonstick spray and spread the mini marshmallows evenly over it.
  • Turn your oven to broil and place the marshmallow-covered baking sheet inside. Watch very closely as marshmallows toast extremely quickly (typically under two minutes). Remove once golden brown and set aside to cool slightly.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the slightly softened butter until it is light, fluffy, and very smooth.
  • Add the pinch of salt and the cooled, toasted marshmallows to the butter. Beat until the marshmallows are evenly distributed and incorporated into the mixture.
  • Add the vanilla extract, then gradually add the powdered sugar, alternating with the heavy cream. Once all ingredients are added, beat the buttercream on high speed for 3 minutes until smooth and airy. This frosting can be made ahead of time and stored in the refrigerator; it will need to sit at room temperature for 4-5 hours to become soft and spreadable again.

Assembly

  • Place half of the cooled cookies upside down. Pipe or spread a generous amount of toasted marshmallow frosting onto the backs of these cookies, starting about ¼ inch from the edge. Place the remaining cookies on top of the frosting to create cookie sandwiches, pressing down gently until the frosting spreads to the edges. Arrange the assembled cookie sandwiches on a wax paper-lined baking sheet and chill in the refrigerator for at least 30 minutes, or until the frosting is mostly firm, which makes dipping easier.
  • Melt the finely chopped chocolate in a microwave-safe bowl in 30-second increments, stirring until fully smooth. Once melted, you can either dip half of each s’mores cookie sandwich into the chocolate or drizzle the chocolate over the cookies. Allow the chocolate to set completely before enjoying!
