Key Ingredients for Authentic Butter Chicken

Crafting the perfect Indian Butter Chicken begins with understanding the role each ingredient plays. This dish relies on a harmonious blend of spices and rich dairy to achieve its signature taste and texture. Below, we break down the essential components that make this homemade Butter Chicken truly special.

Ingredients used to make Indian Butter Chicken laid out on a white background.
  • Garam Masala: This isn’t just a spice; it’s the soul of many Indian dishes, including our beloved Butter Chicken. Garam Masala is a fragrant blend of ground spices, typically including cinnamon, cardamom, cloves, cumin, coriander, and black pepper. Its warm, sweet, and slightly pungent notes are what give Indian food its iconic aroma and deep flavor. If you’re serious about Indian cooking, investing in a good quality Garam Masala is essential. It will become a frequent and cherished addition to your spice rack.
  • Cumin: Earthy, warm, and slightly bitter, cumin is a foundational spice in Indian cuisine. Its distinct aroma instantly signals the authenticity of the dish. When paired with Garam Masala, cumin contributes a crucial layer of savory depth, enhancing the overall complexity and ensuring that iconic Indian flavor profile. Don’t underestimate its power to elevate the entire dish.
  • Cardamom: Often referred to as the “Queen of Spices,” cardamom boasts a wonderfully complex flavor profile. It’s simultaneously minty, herbal, citrusy, and subtly fruity, offering a unique perfumed aroma that sets Indian dishes apart. Green cardamom pods are generally preferred for their delicate sweetness, while black cardamom offers a smokier, bolder note. In this recipe, it adds an exotic and aromatic lift that truly distinguishes the Butter Chicken.
  • Tomato Sauce: The robust base of our rich sauce, tomato sauce provides the essential tang and sweetness that complements the creamy butter and spices. You can use a smooth canned tomato sauce for a quick and easy option, or opt for crushed tomatoes for a slightly chunkier texture and more rustic feel. Both work beautifully to build the foundation of this flavorful curry.
  • Butter: The quintessential ingredient that lends this dish its name and much of its luxurious character. Butter contributes a profound richness and a silky texture to the sauce, helping to mellow and balance the vibrant spices. It’s not just for flavor; it’s integral to achieving that signature glossy, makhani (buttery) finish.
  • Heavy Cream: This is what truly transforms the sauce into its creamy, indulgent form. Heavy cream (or whipping cream) adds a luscious mouthfeel and helps to create that beautiful, smooth consistency that coats every piece of chicken. It also plays a vital role in tempering any heat from the spices, resulting in a perfectly balanced and mild flavor.
  • Greek Yogurt: A secret weapon in the marinade, Greek yogurt serves a dual purpose. Its acidity acts as a natural tenderizer for the chicken, ensuring it remains moist and succulent during cooking. In the sauce, it adds a subtle tanginess that brightens the rich flavors and contributes to a slight thickness, giving the curry a more substantial body.

Step-by-Step Instructions: Crafting Your Butter Chicken Masterpiece

Follow these detailed steps to create a truly unforgettable Indian Butter Chicken. Each stage is designed to build layers of flavor, ensuring a rich and authentic dish every time.

  1. Prepare the Flavorful Chicken Marinade: In a medium-sized mixing bowl, combine the minced garlic cloves, grated fresh ginger root, a touch of cayenne pepper (adjust to your preferred heat level), a 15 oz can of tomato sauce (or crushed tomatoes), creamy Greek yogurt, and a generous blend of all our signature spices: garam masala, salt, cardamom, and cumin. Stir all these ingredients thoroughly until you have a smooth, aromatic, and beautifully colored marinade. This mixture is the heart of your butter chicken’s flavor.

  1. Marinate the Chicken for Deep Flavor: Add your 1-inch cubed boneless, skinless chicken breasts to the prepared marinade. Toss well to ensure every piece of chicken is fully coated. Cover the bowl tightly with plastic wrap and refrigerate. Allow the chicken to marinate for at least 2 hours. For truly spectacular flavor and tender chicken, I highly recommend marinating for 6 hours or even overnight. The longer it marinates, the more intense and delicious your butter chicken will be!

  1. Prepare for Sautéing and Building the Sauce: Preheat your oven to 350°F (175°C). In a large, heavy-bottomed skillet or Dutch oven, melt a generous amount of unsalted butter (six tablespoons for that classic buttery richness) over medium to medium-low heat.
  2. Sauté the Onions: Add the thinly sliced red onions to the melted butter. Cook them gently for 4-5 minutes, stirring occasionally, until they become soft, translucent, and slightly sweet. This step creates a foundational layer of aromatic flavor for your sauce.
  3. Sear the Marinated Chicken: Carefully add the marinated chicken and all the remaining marinade from the bowl into the skillet with the softened onions. Increase the heat slightly to medium-high and cook for 4-5 minutes. Stir frequently to ensure the chicken cooks evenly and the sauce begins to bubble and thicken. The chicken doesn’t need to be cooked through at this stage; we are “par-baking” it to develop flavor.

  1. Add Cream and Cilantro: Remove the skillet from the heat. Stir in the heavy cream and the freshly chopped cilantro. The cream will instantly transform the sauce, giving it that characteristic luscious, orange hue and smooth texture. The cilantro adds a burst of fresh, herbaceous flavor that brightens the entire dish.

  1. Finish Baking and Serve: Transfer the par-cooked chicken and its rich sauce to an 8×8-inch baking dish. Cover the dish tightly with aluminum foil to trap moisture and allow the flavors to meld beautifully. Bake for 25 minutes. Then, remove the foil and bake for an additional 5 minutes to allow the sauce to thicken slightly and the top to achieve a delightful sheen. Serve your glorious Indian Butter Chicken immediately over a bed of perfectly cooked rice, garnished with extra fresh cilantro if desired.

Expert Tips for the Best Homemade Butter Chicken

To ensure your Indian Butter Chicken is nothing short of perfection, consider these invaluable tips gleaned from countless batches of this beloved dish:

Customizing the Heat Level with Cayenne Pepper: This recipe is designed to be family-friendly with a mild spice level. I suggest starting with ¼ teaspoon of cayenne pepper, which provides a gentle “kick” without overpowering the other delicate flavors. If you or your guests prefer more heat, don’t hesitate to increase it to ½ teaspoon, or even ¾ teaspoon for a bolder spice. Always taste and adjust to your preference – it’s your kitchen, after all!

Choosing Your Tomato Base: The tomato component forms the backbone of the sauce. While a can of smooth tomato sauce works wonderfully for a consistent texture, crushed tomatoes offer a slightly more rustic and textured sauce. Both are excellent choices. If you’re feeling adventurous and have fresh, ripe tomatoes on hand, you can certainly use them! Simply blanch, peel, and puree them for a vibrant, fresh flavor. Alternatively, roasting fresh tomatoes beforehand can add a beautiful depth and sweetness to your sauce.

The Magic of Extended Marination: While 2 hours is the minimum to infuse flavor into the chicken, I cannot stress enough the transformative power of a longer marination. Preparing the marinade and chicken in the morning, then letting it sit in the fridge throughout the day (for 6 hours or more), allows the flavors to truly meld and the yogurt to work its magic in tenderizing the chicken to an unparalleled degree. This prep-ahead strategy also makes dinner time a breeze!

Embrace Chicken Thighs for Extra Juiciness: While boneless, skinless chicken breasts are convenient and delicious, consider using boneless, skinless chicken thighs for an even juicier and more flavorful butter chicken. Thighs are naturally more forgiving and tend to stay moist even if slightly overcooked. Simply cut them into 1-inch chunks, just like the breast meat.

Achieving a Silky Smooth Sauce: For a truly restaurant-style, velvety smooth sauce, after step 6 (before transferring to the baking dish), you can carefully transfer the contents of the skillet to a blender. Blend until completely smooth, then return the sauce and chicken to the skillet before proceeding to bake. Be cautious when blending hot liquids, and ensure the blender lid is vented.

Don’t Skimp on Fresh Garnish: A sprinkle of fresh, chopped cilantro is not just for decoration; it adds a burst of freshness that beautifully cuts through the richness of the butter chicken. A swirl of extra heavy cream or a dollop of Greek yogurt just before serving can also enhance the visual appeal and add another layer of creamy indulgence.

What to Serve with Your Delicious Indian Butter Chicken

Indian Butter Chicken is a complete meal in itself, but its rich and flavorful sauce practically begs for delicious accompaniments. Here are some perfect pairings to complete your Indian feast:

  • Aromatic Rice: The classic pairing! Serve your Indian Butter Chicken atop a generous bed of warm, fluffy rice. White rice, brown rice, jasmine rice, or traditional Basmati rice (known for its fragrant aroma and long grains) all work beautifully to soak up every drop of that luscious sauce. Choose whatever you have on hand, but Basmati often enhances the authentic experience.
  • Warm Naan Bread: This is an absolute must-have! My easy naan recipe is perfect here. The soft, chewy, slightly charred flatbread is the ideal vehicle for scooping up the rich, creamy sauce and tender chicken. Its subtle sweetness and slight chew provide a wonderful contrast to the curry.
  • Flavorful Vegetables: To balance the richness of the main course, consider adding a side of vegetables. My buttered vegetables recipe offers a simple yet delicious way to add freshness and texture. Alternatively, roasted frozen cauliflower provides a delightful charred flavor and tender bite that complements Indian spices wonderfully.
  • A Simple Green Salad: For a lighter, refreshing contrast, a simple spring mix salad with a light vinaigrette can cut through the richness of the butter chicken, offering a crisp, cool element to your meal.
  • Cooling Raita or Yogurt: A side of cooling cucumber raita (yogurt with cucumber and spices) or even just a plain dollop of Greek yogurt can be a delightful addition, offering a refreshing counterpoint to the warm spices of the curry.

Frequently Asked Questions About Indian Butter Chicken

What does Indian Butter Chicken taste like?

Indian Butter Chicken, also known as Murgh Makhani, is celebrated for its incredibly rich, creamy, and mildly spiced flavor profile. It features tender chicken enveloped in a luxurious sauce made from tomatoes, butter, and heavy cream. The taste is primarily savory with a delightful touch of sweetness, derived from the tomatoes and cream, and is beautifully balanced by a medley of aromatic Indian spices like garam masala, cumin, and cardamom. It has a distinctive tomato-y tang that forms the base of the sauce, with the butter and cream mellowing any potential heat, resulting in a velvety, comforting, and deeply satisfying flavor that is rarely very spicy.

Is Butter Chicken similar to Chicken Tikka Masala?

While both Butter Chicken and Chicken Tikka Masala are popular creamy Indian chicken dishes, they have distinct differences. Butter Chicken (Murgh Makhani) typically has a smoother, richer, and sweeter sauce due to a higher proportion of butter and cream, and often a less pronounced spice level. The chicken is usually cooked in a pan or oven. Chicken Tikka Masala, on the other hand, often features grilled or tandoor-cooked chicken (tikka) pieces that are then simmered in a creamy, spiced tomato and onion-based sauce. Tikka Masala tends to be less creamy and can sometimes be spicier, with a more robust and complex blend of spices, and often a slightly smokier flavor from the grilled chicken. Both are delicious, but offer unique culinary experiences.

Is Butter Chicken spicy?

Traditionally, Indian Butter Chicken is known for its mild flavor profile. It’s designed to be rich and creamy, with the butter and cream balancing out the spices, making it less spicy than many other Indian curries. This recipe includes a small amount of cayenne pepper, which can be adjusted to your preference. You can easily make it very mild by omitting cayenne, or increase the amount for more heat. It’s generally a great option for those who enjoy flavor without intense spice.

Can I make Butter Chicken vegetarian or vegan?

Absolutely! To make a vegetarian version, simply substitute the chicken with paneer (Indian cheese), firm tofu, or a hearty vegetable like cauliflower (as in my Indian Butter Cauliflower recipe) or chickpeas. For a vegan option, use a plant-based butter, coconut cream instead of heavy cream, and a dairy-free yogurt for the marinade. The spices and tomato base remain the same, ensuring a delicious plant-based curry.

Can I freeze Indian Butter Chicken?

Yes, Butter Chicken freezes exceptionally well! Once cooked and completely cooled, transfer it to airtight freezer-safe containers or heavy-duty freezer bags. It can be stored in the freezer for up to 2-3 months. When ready to enjoy, thaw overnight in the refrigerator and reheat gently on the stovetop, adding a splash of water or cream if the sauce is too thick.

Packed with incredible FLAVOR! This Indian Butter Chicken recipe is a family favorite, easy to make, and loved by everyone for its rich, creamy, and mildly spiced goodness.

Prep Time: 20 mins

Cook Time: 25 mins

Marinate Time: 2 hrs

Total Time: 2 hrs 45 mins

Servings: 6 servings

Ingredients

  • 1 lb boneless skinless chicken breasts – cut into 1″ inch chunks

Marinade

  • 4 garlic cloves – minced
  • 1 inch ginger root – grated
  • ¼ teaspoon cayenne pepper – add more if you want more heat (see notes)
  • 1 15 oz can tomato sauce – or crushed tomatoes
  • cup plain greek yogurt
  • 3 ½ teaspoons garam masala
  • 2 teaspoons salt
  • ¼ teaspoon cardamom
  • 1 teaspoon cumin
  • 6 tablespoons unsalted butter
  • ½ red onion – thinly sliced, in half moons
  • ½ cup heavy cream
  • 3 tablespoons cilantro – chopped
  • cooked rice – for serving

Instructions

  1. In a medium sized bowl, combine the minced garlic cloves, grated ginger, cayenne pepper, canned tomatoes (sauce or crushed), Greek yogurt, garam masala, salt, cardamom, and cumin. Stir well to combine all ingredients. Add the cut-up chicken to this marinade, ensuring every piece is coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to marinate.
  2. Preheat your oven to 350°F (175°C). In a large skillet, melt the unsalted butter over medium heat. Add the thinly sliced red onions and cook for 4-5 minutes, stirring until the onions are soft and translucent. Add the marinated chicken and the entire marinade mixture to the skillet. Cook for 4-5 minutes over medium-high heat, stirring frequently, until the mixture begins to boil and the chicken is partially cooked. Remove the skillet from the heat. Stir in the heavy cream and freshly chopped cilantro.
  3. Transfer the par-cooked chicken and sauce to an 8×8 inch baking dish. Cover the dish securely with aluminum foil. Bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 5 minutes to allow the sauce to thicken slightly and develop a richer color.
  4. Serve your Indian Butter Chicken hot over a bed of cooked rice and with a side of warm naan bread. Garnish with additional fresh cilantro if desired.

Notes

Cayenne Pepper: I typically add ¼ teaspoon of cayenne pepper for a mild “kick.” If you prefer a spicier dish, feel free to increase this to ½ teaspoon or more. Always adjust to your family’s heat preference!

Tomato Base: Canned tomato sauce and crushed tomatoes both work excellently as the base for this recipe. If using diced tomatoes, you can partially drain them and then blend them until smooth for a similar consistency. For an even fresher taste, you can use pureed fresh tomatoes, perhaps even roasted beforehand for deeper flavor.

For the most tender and flavorful chicken, I highly recommend allowing the chicken to marinate for a longer period. I often prepare this in the morning and let it marinate for about 6 hours throughout the day. The longer the chicken soaks in the spiced yogurt, the more succulent and aromatic the final dish will be.
