Making these tropical popsicles is not just easy; it’s also a fun and rewarding process that yields delicious results. The primary step involves blending our two star ingredients into a luscious, smooth puree.

The Blending Process: Achieving the Perfect Consistency

Begin by adding the frozen mango chunks and pineapple juice to a high-powered blender. The quantity of liquid is intentionally kept minimal to ensure a rich, fruity flavor and a dense, creamy popsicle texture.

Blend the mixture until it reaches a perfectly smooth consistency. The use of a high-quality, powerful blender, such as a Vitamix, is highly recommended for this recipe. Because we’re working with a small liquid-to-solid ratio, a robust blender ensures all the frozen fruit is thoroughly pulverized into a silky puree, free of icy bits. If you don’t have a high-powered blender, you can still achieve a great result by blending in smaller batches, or by letting the frozen mango thaw slightly for about 5-10 minutes before blending, which will make it easier for a less powerful machine to process. You might also need to stop and scrape down the sides of the blender a few times.

However, if you appreciate a little texture in your frozen treats, don’t fret if a few small mango chunks remain! A slightly chunky popsicle can be a delightful experience, offering bursts of concentrated mango flavor with every bite. The choice is entirely up to your personal preference.

Of course, this extra step isn’t mandatory! You can absolutely pour the puree directly from your blender jar into the popsicle molds, and it will work perfectly fine. Many people opt for this straightforward approach, and it’s a perfectly acceptable way to get the job done. My personal preference for the piping bag simply comes down to minimizing mess and ensuring a tidy workspace.

Critical Pro Tip: Regardless of your filling method, it is crucial NOT to fill the popsicle molds all the way to the very top. Leave a small gap, approximately 3-5mm (about 1/8 to 1/4 inch), from the rim. This is because liquids expand slightly when they freeze. Leaving this small space prevents the popsicles from overflowing and creating a messy, uneven top once frozen.

With the molds filled correctly, all that’s left is to place the cover securely over each popsicle mold, insert the popsicle sticks into their designated slots, and transfer them to the freezer for their final transformation into icy treats!

The Waiting Game: How Long Should Popsicles Freeze For?

The freezing time for your pineapple mango popsicles can vary slightly, primarily depending on the temperature of your initial ingredients.

  • If you used frozen mango chunks: These popsicles have a head start! Because the mango is already frozen, the mixture will be much colder when it goes into the molds. This often means they’ll be ready to enjoy sooner. You might be able to get away with as little as 4 hours of freezer time. However, to ensure they are solid all the way through, especially on a very hot day, 5-6 hours is a safer bet.
  • If you used fresh mango chunks: Since fresh mango is at room temperature or refrigerated, it will take longer for the popsicles to freeze completely. In this case, you’ll want to freeze your pineapple mango popsicles for a full 6-8 hours, or even overnight, to ensure they are perfectly firm and solid throughout. Patience is key for the best texture!

Always check for firmness before attempting to remove them from the molds. A fully frozen popsicle will come out cleanly and hold its shape perfectly.

Be quick though, you don’t want them to melt!

Once demolded, if you don’t plan to eat all your popsicles immediately, it’s best to store them properly to prevent freezer burn and maintain their delicious flavor. Simply wrap each individual popsicle tightly in plastic wrap or parchment paper, then place them in an airtight freezer-safe bag or container. They can typically be stored this way in the freezer for up to 2-3 weeks.

Ingredients


  • 3
    cups
    frozen mango chunks
  • 1 ½
    cups

    pineapple juice

Equipment

  • popsicle molds

Instructions

  • Add the frozen mango chunks and pineapple juice to a high-powered blender.
  • Blend until smooth.
  • Divide the pineapple mango mixture evenly amongst the popsicle molds. Do not fill all the way to the top. Leave 3mm or so from the top.
  • Cover. Place popsicle sticks in the mold and freeze for 6 hours (or 4 hours if using frozen mango, 6-8 if using fresh).
  • After the popsicles are fully frozen, run warm water around the exterior of the popsicle mold for a few seconds. This will help loosen the popsicles from the mold.
  • Enjoy!

Notes

*Rather than run warm water over the popsicle mold, you can fill a casserole dish with warm water and place the popsicle mold into the warm water. Don’t leave it for too long or they’ll melt! 5-8 seconds will do.
*For extra creaminess, add 1/4 cup of full-fat coconut milk to the blender.
*You can add a squeeze of fresh lime juice (about 1 tbsp) for an added zesty flavor.
